Her kommer da litt om syltet sild &#8211; et must ved svenske h\u00f8ytider, ikke minst ved p\u00e5sketider som vi n\u00e5 n\u00e6rmer oss. <\/p>\n<p>Dessuten, som mange lesere vil vite: Sild i ulike varianter og andre godsaker fra havet er jo urokkelig heftet ved Sons nyere historie. Nemlig produkter fra Soon Hermetikfabrikk, til Viking Canning Co. Ltd, med Odd Birkeland som leder av Salat og sildeavdelingen. <\/p>\n<p>Birkelands kryddersild etter egen resept var ber\u00f8mt og etterspurt, ogs\u00e5 i sildelandet Sverige. Betydelige mengder ble i en periode eksportert dit.<\/p>\n<p>SYLTET SILD \u2013 et must ved svenske h\u00f8ytider<\/p>\n<p>Den syltede silden er en ordentlig svensk klassiker. Den har aner fra tiden da konservering var alfa og omega for \u00e5 kunne ta vare p\u00e5 r\u00e5varene og \u00e5 strekke forsyningen utover vinterhalv\u00e5ret. <\/p>\n<p>Svenskene ikke har jo ikke beh\u00f8vd \u00e5 hamstre for vinteren p\u00e5 et par hundre \u00e5r. Hvorfor endre p\u00e5 noe som fungerer?<\/em><\/p>\n<p>Til svenskenes forsvar m\u00e5 det sies at de med \u00e5rene har begynt \u00e5 variere litt mer og funnet p\u00e5 nye anretninger, med b\u00e5de spennende og h\u00f8yst usmakelige smakskombinasjoner. Hvorfor ikke spice up tingene med litt ingef\u00e6r og chili, eller sette skrekken i tradisjonalistene med eple, selleri og Fireball?<\/p>\n<p>Foruten fisken er laken ofte lagd av eddik, vann, salt, sukker og valgfritt krydder. Smaker som sursild, sennepssild og matjessild er omtrent obligatoriske under h\u00f8ytidene.
